Joseph E. Aoun, a leader in higher education policy and a renowned scholar in linguistics, is the seventh President of Northeastern University.

1. In a pot boil the chicken breasts with the salt, pepper, and garlic.
2. After the chicken is thoroughly cooked, let it rest to cool.
3. Once cooled, pull the chicken by hand or with forks. This will become the filling of your Flautas.
4. Warm up your tortillas on the stove top to become flexible. A warm tortilla should wiggle or “dance”.
5. Take 1 tortilla and “line up” the chicken with some cheese and lightly tug at one end of the tortilla as you roll up the filling to create a tight chicken roll-up- or a flute!
6. Use a toothpick to hold the roll-up in place or gently push it down to maintain its shape. IF your tortilla starts to break, it is not warm enough to roll, make sure your tortillas are warm and flexible- not hard- to make your Flautas.
7. Once you have your six Flautas rolled up, use the Air Fryer to make them crunchy. Use your preferred oil spray or oil to lightly cover the flautas after you set them on the Air Fryer.
8. Turn the Air Fryer to 350 degrees and let them fry until golden brown - about 10 minutes.

4. Take one flour tortilla and lay it on your baking sheet top it with shredded cheese and chicken evenly coated, leaving a 1 inch border all around. Top with another tortilla.
5. Spray your pan with cooking oil and cook on medium to low heat using the stove top.
6. Flip once the quesadilla is golden brown on one side.
7. Once both sides are cooked and the cheese is melted, let them cool for 5 minutes before slicing them into four’s, so the cheese does not completely stick to your knife.
8. Eat as is or serve with a side of sour cream, guacamole, or your favorite salsa - like Villa Mexico’s black salsa!
1. Take your plantain and cut the top and bottom off, slicing it on the side, to peel off the thick skin
2. Cut the plantain into diagonal slices or rounds, per preference.
3. Use your preferred oil spray or oil to lightly cover the plantain slices after you set them on the Air Fryer.
4. Turn the Air Fryer to 350 degrees and let them fry until golden brown.
5. Let them cool for 10 minutes and eat as they are or top with sugar, or a drizzle of sour cream and sugar.
You can also use fried plantains as garnish on sour cream, or as a high protein side for any dish!
